The wine is very original because it derives from a vine, unknown to most people, the Coda di Volpe Rossa ; this grape has practically disappeared in Irpinia. The Coda di Volpe Rossa variety is still present in some strains in Irpinia since the vines cultivated for family use have preserved its removal; in fact, the vines are generally conducted in the traditional forms of starseto (pergola avellinese), radial or foot. Its name derives from the Latin “Cauda Vulpium”, due to the characteristic shape of the long, tapered and compact bunch that recalls the tail of the fox.

Homemade mixed citrus jam

The mixed citrus jam is produced with selected untreated citrus fruits from the inland areas of the Amalfi coast. The processing is completely manual, so as not to have an oxidation of the product and to obtain candied chunks after cooking. The production is linked to the seasonality that goes from January to the end of March, it is in this period that the lemons offer the best of organoleptic properties making the jam truly unique. Very fresh to the taste, this jam is excellent for making tasty breakfasts to fill sweets or pies, refined to offer for the five o'clock tea together with petit beurre, it goes well with aged cheeses, sheep's milk ricotta and blue cheeses.

The orange marmalade with rum and cinnamon is produced with selected untreated citrus fruits, coming from the internal area of the Amalfi coast The processing of the oranges is completely manual, so as not to have an oxidation of the product and to obtain the zest of such dimensions as to be candied after cooking. The production is linked to the seasonality that goes from January to the end of March, it is in this period that the citrus fruits offer the best of the organoleptic properties making this jam truly unique. In addition to the classic use for breakfast, it can be combined with aged cheeses with an intense flavor, even pecorino, but finds its exaltation spread on small butter pastries to accompany a full-bodied Chinese black tea
