At first the roots are shredded and frayed, placed in perforated baskets and inserted in extractors (coffee pots) where they are subjected to water vapor pressure at 160 ° C.
The extracted juice is concentrated in large pots equipped with mechanical blades that stir the liquid brought to a boil.
During the production of the liqueur, the cold concentrated juice thus obtained is immersed in stainless steel tanks containing water with low mineral content, sugar and pure alcohol to allow mixing (infusion). In this way, a hydroalcoholic solution with a particularly fragrant black color and rich in active ingredients of the licorice root is obtained.
This mixture is then left to rest for a few days, filtered, collected in a storage tank, analyzed and then sent to the filler for filling the previously rinsed and drained bottles.
