Aglianico is a vine that suffers from the heat and therefore needs wind, hilly areas and mild winters.
Aglianico has an intense ruby red color, sharper when young and with a tendency to garnet. for the more structured versions, with sometimes orange reflections in the more mature wines. It is a decidedly consistent wine, thanks to the large quantity of extracts of its musts.
On the nose Aglianico is intense, complex, fruity, spicy. The fruity notes are of black cherries and plums in jam and emerge above all in more mature wines.
The persistence is almost always long to very long, with marked fruity and spicy flavors.
Wines based on Aglianico, thanks to their tannins, but also to their structure, complexity and consistency, are suitable for combinations with grilled meat dishes, as well as for structured and complex roasts.
They are suitable for pairing with both feathered and furred game, duck or pheasant dishes, roe deer or wild boar.
