Wine produced with 100% Fiano grapes in the Samnite area in October.
It expresses great finesse of aromas and gustatory complexity.
Fiano is one of the oldest vines present in Campania.
The firm and dry version of Fiano expresses its best qualities starting one year after the harvest. It is a rather long-lived wine thanks to its structure and acidity so in the more structured versions it can give its maximum up to 3 or 4 years from bottling.
The versatility of the grape means that the sparkling versions find their place alongside the great still wines.
The dry version of Fiano is tasted taking care to uncork the bottle half an hour before tasting to favor the oxygenation of any reduction notes due to the winemaking process.
On the nose the Fiano has a delicate scent of tropical fruits, pineapple, pears and flowers such as acacia, on a background of hazelnuts, honey and toasted almonds.
Thanks to the fullness of its body and the hints of hazelnuts, Fiano goes well with rich fish dishes, even grilled, paella, seafood dishes, white meats and poultry. Also ideal with different types of salads and fresh cheeses. Also very suitable as an aperitif, especially in the sparkling versions, it goes well with small pastries or blue cheeses in the passito or late harvest versions, also suitable to be tasted alone, as a meditation wine.
